Mid-Week Cooking Notes

Oh, I know the photo is hideous, but that's great comfort food for a cold February night. Feast your eyes on chicken kotleti (Russian pan-fried burgers) and mashed potatoes, with a mushroom-and-red wine gravy.

My mom and grandma used to make chicken kotlety with chicken breast in Russia, because the breast meat was typically too tough and dry to use in any other way. Generally you would just buy one chicken, so you would only have one chicken breast, out of which you could only make a few kotlety. This is probably why I don't remember the adults in the house ever eating them - it was us kids that got to enjoy them.

I love kotleti. My grandma half fries them then steams them a little. They come out so light and fluffy and melty it's amazing. And my favorite way to eat them is with mashed potatoes too!

Irina-I made these kotleti out of ground chicken breasts. Agreed that they're too dry to cook any other way (unless you marinade them in yogurt or kefir, I've discovered).

Anna-I also love making kotleti on the grill--you get all the flavor and none of the grease of frying. Whenever I make mashed potatoes for kotleti, I also make a pan-sauce.

Hi there! I've been perusing Russian food blogs and came across yours... I am from Azerbaijan but live near La Crosse just on the other side of the state.

I totally agree about the chicken breast - I wish Americans would see the light on that one! On the other hand, that means more dark meat for me!

I am playing around with a food blog myself (somewhat incorporating Russian and other traditional cuisines) though it is mostly about farm cooking with lots of butter. (I know it's lame to drop a link like that, but as we share a common background, here it goes)
