When mixed with white stock, such as chicken, veal, or fish stock, it becomes a veloute. Now, a mixture of stock and milk... I'm not sure what that is called, but it sounds delicious. I know a sauce supreme is veloute with heavy cream. So, technically you can call that a sauce supreme.<br /><br />P.S. Awesome blog.
